On the nose, it releases intense scents of smoke, sweet smoke, aromatic herbs, and mineral nuances that evoke the volcanic soil from which it originates. On the palate, it is enveloping and complex, with notes of caramel, black pepper, and slightly toasted touches, typical of slow cooking in stone ovens. The finish is long and warm, leaving a suggestion of primordial genuineness.
It pairs perfectly with traditional Mexican dishes, such as tacos al pastor or grilled meats, but is also extraordinary when sipped neat, to fully appreciate its craftsmanship and ancestral charm.
