The Nebbiolo Langhe DOC from Cavallotto represents an authentic and deeply territorial expression of the renowned Nebbiolo grape, cultivated in the famous hills of the Langhe, the heartbeat of Piedmontese viticulture. This wine delights with its ability to balance elegance and complexity, features that distinguish it as one of the most appreciated examples of Nebbiolo.

Visually, the Nebbiolo Langhe DOC from Cavallotto presents with a bright ruby red color that tends to garnet nuances with aging. On the nose, it offers an intensely layered aromatic bouquet, characterized by notes of ripe forest fruits, such as cherry and raspberry, enriched with hints of violet, tobacco, and sweet spices, a hallmark of maturation in wood.

On the palate, the wine reveals itself to be structured, yet magnificently balanced. The tannins are robust yet refined, perfectly integrated with the typical acidity of Nebbiolo, contributing to a long and persistent finish. The flavor complexity includes subtle touches of leather and licorice, with an aftertaste that lingers, inviting another sip.

This wine is ideal to accompany dishes from the Piedmontese cuisine, such as tagliolini with truffle, braised meats, and roast meats, as well as aged cheeses. It is advisable to decant the Nebbiolo Langhe DOC from Cavallotto for a few hours before serving to enhance its organoleptic qualities.

Aging and cellar potential: The Nebbiolo Langhe DOC from Cavallotto benefits from aging in oak barrels ranging from 12 to 18 months, followed by further refinement in the bottle that allows the wine to develop a greater aromatic bouquet and increased complexity on the palate. If stored under optimal conditions, it can evolve well for over 10 years.

Winery history
The Cavallotto family has cultivated the Bricco Boschis hill since 1928. After World War II the winery began vinifying its own grapes, a practice firmly established in 1946, and the first Barolo under the Cavallotto label dates back to 1948. Today the estate is run by the next generation, which has preserved unified vineyard management and a focus on the local terroir.
Production philosophy
The estate emphasizes the character of its territory by making wine exclusively from grapes grown in its own vineyards, practicing organic viticulture, and following a winemaking approach focused on minimal intervention.
Terroir and vineyards
The estate is located in Castiglione Falletto, in the heart of the Langhe, and is known for the cru Bricco Boschis. The vineyards are concentrated on a single hillside and have exposures and altitudes typical of the lower Langa around Alba, favorable to the cultivation of Nebbiolo da Barolo.
