“13 Lune” comes from 100% Pinot Noir grapes grown in Lombardy, in the heart of Oltrepò Pavese at about 250 m above sea level. with North/North-West exposure. The vineyards are tended respecting the canons of Organic Agriculture. The harvest is carried out manually, with careful selection of the product, in the cellar the bunches undergo a soft pressing with an automatic central lung press for the division of the juice from the skins with static settling at 12 °C for 28-30 hours. The alcoholic fermentation is activated with selected yeasts at a controlled temperature of no more than 16°C, with permanence on the lees for a period of about 20 days, after which it is cooled down to 8°C. This is followed by refermentation in the bottle and maturation in contact with the lees for 12 months, final disgorgement and a further 60 days of refinement.

In the glass it has a beautiful straw yellow color with greenish reflections. The floral and fruity aromas of apricot prevail on the nose, perfectly blended with mineral hints. In the mouth the taste is decidedly balanced and structured, but still full and soft.

An elegant sparkling wine that will give pleasant sensations in combination with elaborate aperitifs, appetizers and fish-based dishes.
