Produced by Santus, the Rarità Riserva 2012 Zero Dosage presents a decisive, linear character: fine perlage, a golden color with amber reflections that tell of years of evolution. On the nose it offers a bouquet of elegant secondary notes — bread crust, toasted hazelnut and dried citrus peel — accompanied by a mineral streak that keeps the palate fresh and vertical. The absence of added sugars accentuates aromatic purity and palate tension, making the profile complex yet dry.

On the palate it shows structure and sapidity: the acidity is still vibrant, the body is full but well balanced and the texture is creamy without being opulent. The finish is persistent, with returns of dried fruit and toasted notes that invite another sip. It is enjoyed alongside raw seafood, mushroom-based dishes, savory risottos or aged cheeses; it should be served cool but not cold to capture all its nuances.
