Distilled from the pure juice of fresh sugarcane, as required by the "rhum agricole" designation, JM Vieux VSOP ages for a minimum of four years in oak barrels previously used for Bourbon. Ageing
Maturation in oak barrels (new or used) with in‑house management of toasting/charring; barrels vary in capacity and origin and part of the aging is managed to develop vanilla, caramel and spicy profiles.
