The Romagna DOC Sangiovese Appassimento "Galante" produced by Terre Cevico is a red wine that expresses the richness and intensity of the Romagna region through a particularly fascinating winemaking method: appassimento. This technique involves the use of partially dehydrated Sangiovese grapes, which concentrate their sugars and aromas to produce a wine of great structure and complexity.

This wine exhibits a deep, seductive red color, with garnet reflections that light up the glass. On the nose, it stands out for its intense aromas of ripe fruit such as plums and spirit-soaked cherries, enriched by spicy notes of vanilla and chocolate, due to aging in barriques. On the palate, "Galante" reveals itself as generous and velvety, with a soft tannin that envelops the mouth in a persistent embrace. Hints of dried fruits and a slight balsamic note complete the profile of this rich and enveloping wine.

Ideal for pairing with hearty dishes like Bolognese ragù, meat roasts, and aged cheeses, this Sangiovese Appassimento is an excellent choice for those wishing to savor the essence of Romagna through a wine of strong identity and character. The careful preparation and selection of the best grapes reflect Terre Cevico's commitment to enhancing local wines through innovative techniques that respect tradition. A true gem for lovers of structured and aromatic wines.
