Distillation
Distillation in a Charente-style copper pot still with a 7-plate column ('La Belle Aline'); use of hybrid Charentais/column stills for some cuvées; a distillation strategy aimed at highlighting the vin de canne with long fermentations and thermal control.
Ageing
Selection and blending in tuns (large-capacity containers, including ex-Cognac) to rest and oxygenate; for aged rhums, transfers and maturation in French oak barrels (e.g. 320 L) for finishing.
