The Saint-Joseph "Les Côtes" produced by Vincent Paris is a red wine that exudes elegant sophistication and a vivid expression of the terroir of the Rhône Valley region. The vineyard is located on steep granite slopes which contribute to the wine's distinctive mineral complexity. This wine is crafted with Syrah grapes, handpicked and carefully selected, then undergoes a traditional fermentation with indigenous yeasts.

The aromatic profile of this wine is rich with nuances of dark fruits like blackberries and plums, enhanced by spicy notes of black pepper and a slight touch of aromatic herbs and floral hints that add depth. On the palate, "Les Côtes" features a well-balanced structure with fine tannins and persistent freshness, leading to a long and pleasantly spicy finish.

With an aging potential that makes it ideal for cellaring, this wine pairs wonderfully with robust dishes such as grilled red meats, rich stews, and aged cheeses. A true gem that splendidly represents the winemaking skill of the Vincent Paris winery and the authentic character of the Saint-Joseph terroir.

Winery history
Vincent Paris established his own estate after studying viticulture and oenology. The project began with small vineyards in Cornas and later expanded to include several crus of the Northern Rhône. The official website and technical sheets report that operations started in 1997.
Production philosophy
Vineyard work focused on quality: practices in "culture raisonnée" with limited treatments, grass cutting where possible, severe pruning, manual leaf thinning and targeted harvesting; in the cellar, controlled vinifications with macerations and carefully managed aging.
Terroir and vineyards
The domaine is located in Cornas on steep granite slopes that inspire the cuvée names; it also produces wines in the Saint-Joseph and Crozes-Hermitage appellations and a Vin de Pays/IGP from the Ardèche.
