This wine comes from the appassimento (drying) of Sangiovese di Romagna grapes, a technique that concentrates aromas and structure while maintaining pleasant freshness. On the nose it offers ripe red fruits and dried plum, with hints of amarena cherry, a touch of sweet spice and a light note of tobacco leaf. On the palate the sip is full and enveloping, soft in tannins but supported by a vibrant sapidity that keeps it lively and enjoyable. The finish is good and the overall character is balanced and straightforward, without excess.

It suits structured dishes: braised dishes, roasted meats, rich ragùs and aged cheeses find an excellent contrast with its fruity body and fresh note. Serve slightly chilled, around 16–18 °C, to enhance its balance; it's equally pleasant by the glass as a companion to an informal dinner. A wine to drink with attention to contrast and simplicity, which makes the most of the appassimento without becoming overly opulent.
