Le uve vengono raccolte rigorosamente a mano nelle ore più fresche del mattino e immediatamente conferite alla cantina, dove vengono spremute intere, il mosto così ottenuto, inizia il suo percorso completamente nuovo, per quanto riguarda un Sauvignon Blanc di Villa Russiz; infatti fermentazione e affinamento avvengono in botti di rovere, per un totale di 18 mesi. Dopo di che, il vino viene assemblato in vasca d’acciaio, dove rimane per almeno 4 mesi, per poi essere imbottigliato. Dopo un periodo di affinamento in bottiglia di 8 mesi circa è disponibile.

Al naso elegante e vibrante con i sentori tipici del Sauvignon Blanc, pesca a pasta bianca, fiori bianchi e leggera foglia di pomodoro; al palato è un vino che emoziona, grande mineralità, freschezza, sapidità sono tutti ben coordinati dall’uso sapiente del legno che non maschera le caratteristiche varietali ma bensì le esalta, ed è proprio nel retrogusto che si percepisce in maniera netta le note del varietale classico, lasciando in bocca sapori e sensazioni molto persistenti dopo l’assaggio.

Ottimo con sushi, piatti complessi con pesci grassi come tonno e salmone, baccalà.

Winery history
The estate was founded in the second half of the 19th century, when Elvine Ritter de Zàhony and Count Theodor de La Tour transformed Russiz into a pioneering wine property. Over the course of the 20th century the estate evolved into today’s Fondazione Villa Russiz: proceeds are dedicated to social initiatives and a family-style care home, while the winery preserves Collio’s winemaking tradition and develops cru lines and fine wines.
Production philosophy
Putting the land first: rigorous vineyard management, respect for Collio's microclimate, and winemaking designed to express the characteristics of each grape variety. The Foundation combines enological quality objectives with an ethical and social mission.
Terroir and vineyards
Located in the Collio goriziano, the estate occupies vineyards on well‑exposed hillsides, on "ponca" soils. The microclimate, influenced by the Julian Alps and the nearby Adriatic, promotes diurnal temperature variations and intense aromas in the wines.
