It is best enjoyed slowly, in a tulip glass or coupe, to capture the aromatic evolution between sips; the boxed presentation also makes it ideal as a gift. It pairs pleasantly with small tastings of dark chocolate, not-too-intense aged cheeses, or dry sweets made with dried fruit, yet it still maintains its character when chosen as a contemplative digestif.

Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
