On the palate it confirms tension and purity: lively acidity, well-calibrated salinity and a persistence that recalls bread crust and citrus zest. Structured yet lean, it pairs well with raw seafood, shellfish, light fried dishes and fresh cheeses; it also stands up to more refined fish dishes or delicate risottos. Serve chilled, around 6–8 °C, to fully appreciate the perlage and the clarity of the sip.
