The Spumante Brut by Cotarella represents an elegant interpretation of the Italian sparkling wine art, produced in the suggestive region of Lazio, where the temperate climate and volcanic soils give character to the cultivated grape varieties. Obtained mainly from selected grapes of Chardonnay and Pinot Nero, this sparkling wine stands out for its vibrant freshness and a fine, persistent perlage, the result of a meticulous secondary fermentation in autoclave. The aging on the lees enriches the bouquet with hints of bread crust, fruity notes of green apple, and delicate floral nuances, balanced by a well-rounded acidity that enhances its drinkability. On the palate, it is dry and harmonious, with a savory and fragrant finish that invites a second sip. Ideal as an aperitif or paired with delicate fish dishes and refined appetizers, this sparkling wine reflects the passion and expertise of Cantina Cotarella, highlighting the expressive potential of the Lazio territory.

The company has also conducted research and initiatives to recover local grape varieties such as Roscetto.
