Distillation
Traditional small-batch methods: cooking the piñas in traditional ovens (including pit or masonry ovens), natural/spontaneous fermentation in wooden vats, and double distillation predominantly in copper stills; some cuvées also document the use of traditional stills/containers in wood or ceramics.
Ageing
Variable: many Raicillas are presented young (unaged); some distillates and the Tequilas (e.g. the Reposado) receive a short maturation in wooden barrels (for the reposado commercial sheets indicate a minimum period of around 2 months up to 1 year).
