The Passobianco from the Passopisciaro winery is a white wine that excellently celebrates the aromas and flavors of the Sicilian territory. Produced under the Terre Siciliane IGP denomination, this wine is a tribute to the richness and diversity of the region.

The Passobianco is predominantly made from Chardonnay grapes, grown on the volcanic slopes of Mount Etna, where the mineral-rich soils and unique altitude impart a distinctive characteristic to the fruit. The harvest is performed manually, carefully selecting the best clusters to ensure superior quality. Fermentation takes place in stainless steel containers to preserve the freshness and aromatic integrity of the grapes, followed by a brief maturation period in oak barrels, which further refines the wine's profile.

Visually, the Passobianco presents a light, bright, and inviting straw-yellow color. On the nose, it exhibits vibrant notes of white-fleshed fruits such as peach and pear, enriched by subtle hints of vanilla and white flowers, typical of the wood aging. On the palate, the wine expresses great freshness and minerality, balanced by a compelling structure and a persistent finish.

This wine pairs beautifully with flavorful fish dishes, seafood, and delicate cheeses. It is also excellent as an aperitif, capable of stimulating the palate and preparing it for the dishes to come.

The Terre Siciliane IGP - Passobianco - Passopisciaro represents an excellent choice for those wishing to explore the vinicultural richness of Sicily through a structured, elegant, and characterful white wine. A sensory experience that carries with it the warmth and passion of one of the most captivating Italian wine regions.

Winery history
The Passopisciaro project began with Andrea Franchetti’s restoration of terraces and old vineyards on Etna, starting in 2000. Franchetti restored abandoned farmhouses and terraces and revived the vocation of this slope of the volcano, focusing on enhancing the individual parcels and on expressing the territory.
Production philosophy
The production approach favors the expression of terroir and individual vineyard parcels: winemaking is designed to highlight differences in soil, altitude and exposure. In the vineyard, work focuses on old alberello-trained vines and on new planting densities, using techniques aimed at preserving each site's specific character; in the cellar, the approach is guided by measured interventions to reveal the minerality and freshness typical of volcanic soils.
Terroir and vineyards

The estate farms several contrade on volcanic soils, with vineyards planted at elevations of up to approximately 1,000 metres, producing wines characterized by minerality and straightforward fruit notes.
