This particular technique, known as "ripasso", involves a second fermentation of Valpolicella wine on Recioto or Amarone pomace, giving it greater body, structure and additional aromatic intensity. The Magnum format (1.5 litres) of Valpolicella Ripasso DOC Classico Superiore not only enhances the organoleptic qualities of the wine but also makes it an object of great prestige, ideal for special occasions or as a significant gift for wine enthusiasts. Presentation in Magnum also offers improved aging potential, allowing the wine to further develop its complexity over time.

Winemaking follows traditional principles, with careful temperature control to preserve the varietal aromas and aromas. After repeat fermentation, the wine is aged in oak barrels, where it acquires notes of spices, tobacco and vanilla, which add to the richness of its flavor profile.

Visually, Valpolicella Ripasso Classico Superiore has a deep ruby ​​red color, enriched by garnet reflections that develop with aging. On the nose, the wine offers a rich and complex bouquet, where notes of cherry and ripe berries blend with accents of sweet spices, chocolate and a touch of vanilla, the result of aging in wood.

Winery history
The Speri family has been present in Valpolicella for generations: the company's history dates back to the first half of the 19th century and developed over multiple generations into an established producer in Valpolicella Classica. Over the years the owners have expanded the vineyards in the most suitable areas and were among the first local producers to vinify an Amarone. Since the early 2000s the estate has moved toward organic farming, obtaining certification for 100% of production in 2015; more recently it has undertaken projects focused on sustainability and biodiversity.
