A true gem of Burgundy, the Volnay La Cave by Mark Haisma is a red wine that elegantly and finely represents the terroir of one of the most celebrated wine regions in the world. This Pinot Noir, cultivated in one of the most prestigious climates of Volnay, offers a vibrant and complex palate.

On the nose, the Volnay La Cave unfolds an intriguing bouquet of fresh red fruits, such as cherry and strawberry, combined with delicate spicy notes and a touch of damp earth, typical of high-quality Pinot Noir. On the palate, the wine surprises with its balanced structure and finely interwoven tannins, leading to a long and persistent finish.

Ideal to serve at a temperature of 16-18°C, this wine is perfect to accompany delicate meat dishes such as duck or rabbit, and it also makes a magnificent companion for an evening with soft, matured cheeses.

The winemaking technique adopted by Mark Haisma, which includes open vat fermentation and maturation in barrique, allows the preservation of the fruit's authenticity and enhances the subtle minerality of the Volnay soil, making each sip an unforgettable experience for any wine enthusiast.

Winery history
Born and trained in Australia — including a long, decade-long tenure at Yarra Yering — Mark Haisma moved to Burgundy at the start of his European career and began releasing wines as a négociant with the 2009 vintage. Over the years he has developed his project by establishing his own winery and by acquiring vineyards and a small domaine in Gevrey‑Chambertin toward the end of the 2010s. He is known both for purchasing grapes from trusted local growers and for managing his own parcels, progressively expanding his presence across various subzones of Burgundy, with a few projects also in the Rhône and the Mâconnais.

A pursuit of purity and balance: rigorous attention to vineyard work, minimal use of oak and winemaking practices that prioritize the expression of place rather than cellar interventions. It favors wines with a fresh, precise palate that reflect each climat.
Terroir and vineyards
Operates primarily in the Côte de Nuits and other areas of Burgundy, with occasional ventures into the Northern Rhône for some wines.
