| Neat, with ice or in refined cocktails |
On the palate it shows roundness and a clean sip, soft tannins and a balance that echoes the same notes from the nose, with fruity returns and a warm, savory finish. Best enjoyed neat in a tulip glass at a moderate temperature (around 16–18 °C), ideal with dark chocolate, small dry pastries or aged cheeses; a few drops of water can open the aromas and broaden the profile. Presented in a gift box, it also lends itself naturally as a gift for those looking for a spirit of character that is approachable and pleasant on the palate.

Distillation
For the Daniel Bouju cognacs: distillation in a traditional discontinuous pot still (historic still of 16.5 hl) and subsequent maturation in oak barrels; for the Tenute Folonari grappas: discontinuous distillation using steam-heated copper stills.
Ageing
Maturation in wooden/oak barrels for the cognacs and ageing in various wooden casks (in some cases barrique) for the assorted grappas.
