Cambus 31 years is a single grain that impresses with its balance of finesse and warmth: long maturation gives it a mature yet restrained aromatic texture, where notes of baked cereal are accompanied by subtle vanilla, chestnut honey and a veil of caramel. The wood is perceived as a sweet framework rather than an overlay, lending light earthy hints and a touch of cedar; the palate is silky, with a softness that doesn’t erase substance, leaving room for a pleasant freshness that keeps the sip lively.

On the palate it confirms its gentle character, with an enveloping entry followed by a savory, multifaceted progression: returns of sweet spice and a hint of candied orange peel close on a long, clean finish. It lends itself to a meditative tasting, served at room temperature with a drop of water if you wish to open up its profiles. An excellent accompaniment to dark chocolate, desserts made with dried fruit or aged cheeses, when seeking a sip that conveys history and composure.
