On the palate it is full-bodied, the initial creaminess giving way to a savory, enveloping texture: the alcoholic warmth supports aromas of dark honey, bitter almond and sweet pepper without overpowering. The wood tannins are perceptible, contributing to a long persistence consistent with the olfactory profile. It lends itself well to a slow tasting, with a few drops of water to open its scents; it pairs pleasantly with dark chocolate, aged cheeses or small caramel-based desserts. Also ideal for a meditative after-dinner pause.

Distillation
Pot stills (6) with shell-and-tube condensers; full-lauter mash tun and stainless-steel washbacks; process calibrated to produce new make intended for long maturation.
Ageing
Extended maturation in selected casks; the CRN57° range was created using Gordon & MacPhail's stock of matured casks and aims to express profiles obtained from long aging (including finishing in sherry cask).
