On the palate it finds an interesting balance between roundness and tension: the length is long, with sweet recalls alternating with dry and slightly spicy notes. It is ideal enjoyed in a tulip glass at room temperature, optionally with a drop of water to open up the aromatic profiles. It pairs well with dark chocolate, aged cheeses or caramel-based desserts; also suitable for slow contemplation after the meal.

Distillation
Pot stills (6) with shell-and-tube condensers; full-lauter mash tun and stainless-steel washbacks; process calibrated to produce new make intended for long maturation.
Ageing
Extended maturation in selected casks; the CRN57° range was created using Gordon & MacPhail's stock of matured casks and aims to express profiles obtained from long aging (including finishing in sherry cask).
