The aging takes place in oak barrels, some of which were previously used for bourbon and sherry, thus imparting complexity and depth to the product. On the nose, it opens with fragrant notes of cereals, ripe melon, and an elegant spicy nuance. On the palate, the character is enveloping, with a harmonious balance between the sweetness of honey, hints of vanilla, and a light earthy touch reminiscent of the damp underbrush typical of Irish rural areas.
