Distillation and production

Production method

Production based on distinct batches per single farm: separate malting/fermentation/distillation for each origin, maturation in various types of casks and subsequent blending (Cuvée) for main releases. Bottles are generally non-chill filtered and without added color.

Ageing

Maturation in wooden casks with mixed recipes; releases are based on the readiness of the blend rather than a single fixed age. Use of combinations of casks for each bottle and subsequent blending (Cuvée).

Producer history Waterford

Founded by Mark Reynier in 2015, Waterford was created by converting a former brewery building in the city of Waterford (production site) to explore the role of terroir in whisky. Initial distillations and early batches date to 2015–2016; production has concentrated on spirits made from 100% Irish barley in farm-traced batches. The official site notes that, following financial difficulties, joint receivers were appointed on 27 November 2024 and retail sales are temporarily suspended.

Production philosophy

Barley-forward and terroir-driven: putting barley at the center of the process to express soil, microclimate and farming practice. Single-farm productions (Single Farm Origin), calibrated blends (Cuvée) and experiments with alternative agricultural philosophies (organic, biodynamic, Arcadian). Transparency and traceability are key elements (Téireoir code / growers map).
