Starting from sugar cane molasses, fermentation with proprietary yeast strains and spring water filtered through limestone, distillation using a combination of copper pot stills and modern column stills, ageing in American white oak casks (ex-bourbon) and subsequent manual blending by the Master Blender.

Producer history Appleton

The earliest documented traces of rum production in the Appleton Estate area date to 1749. The estate developed over the centuries in Nassau Valley, consolidating a tradition of sugar cane cultivation, distillation and aging. In the 20th century Appleton and J. Wray & Nephew had intertwined industrial histories; in recent years the Campari Group has invested in local operations and the global relaunch of the brand (acquisition and development through J. Wray & Nephew Ltd.).

Production philosophy
