Distillation and production

Production method

Base spirit made from 100% malted barley; distillation in copper pot stills. For gin the same malt-base is used and selected botanicals are added; ageing and finishes take place in various cask types and across different maturation sites in Israel.

Copper pot still distillation; for gin multiple pot still distillations and infusions/steeps of botanicals are used.

Ageing

Finishing in various casks with experimental finishes; accelerated maturation leveraging Israel's Mediterranean climate and, for some expressions, specific conditions in areas such as the Dead Sea region.
