Distillation and production

Production method

Rhum agricole: produced from sugarcane juice (vesou) with extended fermentation, column distillation (for the agricole expressions) and aging in oak barrels. The distillery also uses bagasse as fuel and employs maturation-management techniques in metal containers to promote aromatic extraction.

Distillation

Column distillation for the agricole expressions (column still).

Ageing

Aging in oak barrels (ex‑Bourbon and ex‑Cognac); some expressions are offered as 'brut de fût' (bottled at cask/barrel strength). Barrels are sometimes placed in metal containers to enhance aromatic extraction in a tropical climate, following local practices.

Producer history Montebello

The production now marketed as Montebello originates from the small Carrère distillery. The Marsolle family has run the business for generations: roots tied to cane cultivation since the late 19th century and development of the Carrère distillery from 1930. Over the years the family management modernized equipment while keeping an artisanal character and introducing barrel aging and bagasse recycling practices.

Production philosophy

Focused on quality and on highlighting the Guadeloupe terroir: selection of hand‑harvested cane, controlled fermentation to develop aromatic complexity, and respect for traditional processing practices preserved over time by the owning family.

Territory

Petit‑Bourg, Basse‑Terre, Guadeloupe (French overseas department). Production benefits from the tropical climate and cane coming from the island's volcanic areas.

Awards and recognitions

Multiple medals at the Concours Général Agricole in Paris (various years and classes: gold/silver/bronze across several editions) and awards in international competitions; additionally the Rhum Blanc Agricole 55° earned a gold medal at Spirit Selection 2022, according to the distillery's official communication.
