Distillation and production

Production method

Cultivation on Terra Estate (extensive cane acreage), processing in a modern mill (Terra Milling) that produces both cane juice and molasses. Fermentation with proprietary yeasts for about 35 hours; distillation mainly with a 20‑plate Coffey still and a 17‑plate rectifying column (can produce distillate up to 94% ABV). Ageing in the cellar with barrels filled at around 65% ABV, blending and bottling without chill filtration to preserve flavours.

Producer history New Grove

Production roots are linked to the Domaine de La Villebague (Pamplemousses) with sugar production and distillation activities dating back to the 18th century. The historic company Harel Frères incorporated OK Distillery (today Grays Inc Ltd) and in 2003 Grays launched the New Grove brand, creating the island's first dedicated rum ageing cellar. The brand has received international recognition in recent years.

Production philosophy

New Grove pursues a "crop to drop" (single estate) approach with strict supply‑chain control to ensure traceability and flavour profiles representative of the Mauritian terroir. Emphasis is placed on artisanal blending, selective ageing and experiments with different cask finishings.
