Distillation and production

Production method

For the amari, infusions and macerations of alpine herbs are used according to the traditional recipe; for the grappa distillation takes place in small stills (copper) using artisanal techniques. Some expressions undergo aging in wooden barrels.

Distillation

For grappa, traditional distillation in small copper stills (sometimes by bain-marie according to historical sources); for the amari extraction is done through infusion/maceration of the botanicals.

Ageing

Some expressions (notably Riserva versions) are aged in wooden barrels; the practice of barrel aging in the cellars of Bormio is reported for aged and special releases.

Producer history Peloni

The origin of the best-known product (Amaro Braulio) goes back to pharmacist Francesco Peloni, who in 1875 began preparing infusions from alpine plants in his pharmacy in Bormio. Over time production developed in the family's cellars in Bormio; the Braulio brand experienced changes in corporate ownership, while processing and aging have historically remained connected to the Peloni facilities in the Valtellina area.

Production philosophy

To valorise mountain plants and herbs using traditional methods, preserving the historic recipe for the amari and producing spirits that express the territory of Alta Valtellina.

Territory

Bormio, Upper Valtellina (Lombardy), Italy
