Production method

Mashing with a typical mash bill of 85% native corn / 15% malted barley; fermentation in stainless steel tanks; double distillation (first in steel stills, second in copper pot stills); aging in individual barrels and single-barrel bottling.

Producer history Sierra Norte

Douglas French began producing spirits in Oaxaca in 1996. In 2014 he launched the Sierra Norte project to valorize the ancestral corn varieties of the Sierra Norte area (Oaxaca) and in 2016 released the first single-barrel whisky line; production is managed at the San Agustín de las Juntas facility and bottles are distilled and bottled by Scorpion Mezcal S.A. de C.V.

Production philosophy
