Distillation and production

Distillation and production

Production method

Gaja grappas are obtained by distilling pomace and, according to some product specifications, distillation takes place in discontinuous steam-cycle systems (stainless steel) at the Distilleria Cooperativa del Barbaresco; some expressions are then diluted and/or aged in wood before bottling.

Distillation

Distillation of pomace in a discontinuous steam system (still/column in stainless steel) at the Distilleria Cooperativa del Barbaresco, under Gaja supervision.

Ageing

Some expressions are aged in small barrels (e.g. 225 L) and/or in barrique before bottling; others are bottled as white grappa without extended ageing.

Producer history Gaja

The Gaja family has been active in winemaking since the 19th century; the Barbaresco estate is commonly cited as founded in 1859. Over the years Gaja has extended its activities and vineyards into Tuscany (including Pieve Santa Restituta in Montalcino and Ca' Marcanda in Bolgheri). The Gaja grappa line groups distillates connected to the winery's vineyards and labels and is produced under Gaja's supervision at qualified third-party facilities.

Production philosophy

To offer distillates that reflect the origin of the pomace: often single-vineyard references or linked to specific labels, with attention to grape variety and terroir expression rather than aromatic recipes or heavy use of additives.

Territory

Italy — mainly Piedmont (Barbaresco/Barolo) with expressions also linked to the Tuscan estates (Montalcino, Bolgheri).
