The Gaudensius Blanc de Noir DOC is a brut sparkling wine produced by the renowned Firriato winery, located on the slopes of Mount Etna in Sicily. This wine is an excellent example of how volcanic terroir can positively influence the production of high-quality sparkling wines.

Perfect for special occasions and to accompany refined dishes, the Gaudensius Blanc de Noir is made exclusively from Nerello Mascalese grapes, a native Sicilian variety that gives the wine a unique character. The vinification is done using the classic method, which includes a second fermentation in the bottle, exactly as it is done for Champagne production.

On the nose, this sparkling wine reveals fruity and floral notes, with evident hints of red fruits and subtle nuances of bread crust, due to the extended maturation on the lees. On the palate, the Gaudensius Blanc de Noir presents a complex and well-balanced structure, with a crisp acidity typical of grapes grown in volcanic environments. The perlage is persistent and refined, a testament to the care and quality of production at the Firriato winery.

This sparkling wine is ideal to serve as an aperitif or to celebrate important moments, but it also pairs elegantly with sophisticated fish dishes or delicate appetizers. The ideal serving temperature is between 6 and 8°C, to fully appreciate its aromatic range and lively taste.

Winery history
Founded as a family project by Salvatore Di Gaetano in the 1980s, Firriato has grown by expanding its presence across multiple estates in Sicily and bringing the island’s wines to international markets. The family has remained actively involved in technical supervision and brand development, over time establishing estates dedicated to production, ampelographic research and hospitality.
Production philosophy
The winery pursues an approach focused on respect for the land: careful selection of soils, promotion of local grape varieties and sustainability-focused agricultural management. Firriato declares the conversion of its vineyards to organic farming and has undertaken initiatives to offset and reduce the company's climate footprint.
Terroir and vineyards
The company's holdings are distributed across several estates that represent different terroirs: the hills of the Agro Trapanese, the slopes of Mount Etna and the maritime viticulture of the island of Favignana. The individual estates mentioned in the sources include Baglio Sorìa, Borgo Guarini, Dàgala Borromeo, Pianoro Cuddìa, Giudeo, Cavanera Etnea and Tenuta di Calamoni in Favignana.
