Distillation and production

Production method

Maceration of botanicals in alcohol (grain alcohol at 96°) in stainless steel vats; for vermouths prolonged maceration (about 30 days) is used with part of the macerate then distilled, pressing, blending, aging in steel, filtration and bottling. For some liqueurs (e.g. Amaro della Sacra) cold maceration and several months of aging before bottling are applied.

Distillation

Partial distillation of the macerate for vermouth; other liqueurs may be produced by cold maceration without distillation.

Ageing

Refinement and maturation in stainless steel tanks (for example about 5 months for Amaro della Sacra), followed by filtration and bottling.

Producer history Antica Torino

Antica Torino was founded in 2016 by Vittorio Zoppi and Filippo Antonelli with the aim of rediscovering and reintroducing aromatized wines and typical Piedmontese liqueurs, based on historical research and local recipes from the early 20th century.

Production philosophy

To revalue traditional Piedmont flavors through the use of natural ingredients, carefully cultivated or selected botanicals, period recipes and artisanal techniques, avoiding colorants and industrial flavorings.
