Distillation and production

Distillation and production

Production method

Mechanized harvesting of the estate vineyard; traditional Charentais double distillation, often performed 'avec les lies' (with the lees). Calibrated use of French oak casks for aging; the house reports experimentation and an increased use of new barrels in recent periods.

Distillation

Double distillation in a traditional Charentais pot still; distillation with the lees ('avec les lies') reported for some blends.

Ageing

Long aging in French oak casks; management of family reserves for blends and historic vintages.

Producer history Jean Fillioux

The house began with Honoré Fillioux, who established the business at the end of the 19th century (founding in 1880) and acquired the Domaine de La Pouyade in 1894. Management has remained within the family for generations; Jean, Michel, Pascal and today Christophe Fillioux have contributed to the development of the vineyard and the reserves of eaux-de-vie, creating prized vintages and blends. Production remains limited and focused on expressing the Grande Champagne terroir.

Production philosophy

To showcase the Grande Champagne terroir through patience, long maturation and artisanal care; to defend a high-quality niche production, preserving the heritage of family reserves and progressively reducing the environmental impact of the domaine.

Territory

Domaine de La Pouyade, Juillac‑le‑Coq, within the Grande Champagne area (a prestigious Cognac cru); estate vineyard located on the limestone hills of the cru.

Awards and recognitions

Gold Medal – Concours Général Agricole de Paris 2022 (Réserve Familiale); Prix du Cep d'Or de la Qualité Internationale 1972 (mentioned in the house history).
