Production method

Selection of mature agaves; pit-roasting in underground ovens with wood and river stones; crushing with wooden mallets or tahona; natural fermentation in wooden vats with indigenous yeasts and only the addition of spring water; most expressions undergo at least double distillation (some, like the Pechuga, are distilled three times). Some expressions are distilled in olla de barro (clay pots), others in copper stills.

Producer history Los Siete Misterios

The Los Siete Misterios project began after a trip by the founders and is listed on the official site as having started in 2010. The range developed with a focus on traditional, limited productions, collaborating with Maestros Mezcaleros from Oaxacan communities. In March 2021 a 50/50 joint venture was announced between the consortium led by brothers Eduardo and Julio Mestre and Chatham Imports, which took on the role of exclusive agent for global sales and marketing (excluding Mexico).

Production philosophy

Respect for mezcal traditions, small-batch artisanal production, support for local communities and the valorization of ancestral techniques (pit-roasting, manual processing/tahona, spontaneous fermentation). The stated aim is to combine traditional heritage with contemporary approaches to offer authentic mezcals.

Territory

Production and sourcing concentrated in the state of Oaxaca, Mexico: cited areas and villages include Sola de Vega, San Dionisio, Santiago Matatlán, Yautepec and other Oaxacan localities.
