On the palate it confirms a linear structure: fine tannins, pleasant salinity and a bitter persistence that evolves into citrusy and balsamic returns. The finish is long, slightly warm, making it an excellent digestif but also an interesting base for Mediterranean-style cocktails; it works well both neat at the end of a meal and in mixes with soda or ice. Excellent when paired with dark chocolate or aged cheeses, it can be completed with a citrus peel to accentuate the profile. Serve chilled to appreciate its freshness and the clean sip.

Distillation
For the amari: cold processing (extractions/macerations). For Gin Tony: maceration of juniper berries and botanicals followed by separate distillations that are then combined.
Ageing
Some editions (e.g. Amaro Vecio) are aged in oak casks; for Amaro Vecio a period of barrel rest is reported, with subsequent addition of grappa di Amarone in some versions.
