On the palate it confirms the gentle character promised by the name: the bitterness is soft, the flavor profile balanced and the finish of medium length without aggressive peaks. It serves well as a digestif at the end of a meal, but works equally well over ice or as an ingredient in cocktails that call for balance rather than power. Excellent with dry pastries, a small square of dark chocolate or with aged cheeses; serve chilled to highlight its pleasant freshness.
