With an intense green color, typical of amari made with fresh and aromatic ingredients, it presents herbaceous aromas on the nose, balsamic nuances, and spicy notes that evoke a balance between bitter sweetness and freshness. Rupes

Distillation
For gin: long maceration of botanicals in alcohol and subsequent redistillation (batch still) in the case of some expressions; for grappa: distillation in small bain-marie stills. For amari the prevailing techniques are cold maceration, infusions and percolation.
Ageing
Maturation in oak barrique for some editions (e.g. Rupes Gold); the Hiberna grappas are aged in oak casks (24–36 months depending on the label).
