It’s a versatile wine: ideal with cured meats and tomato-based first courses, it also pairs well with grilled white meats and semi-aged cheeses. It works equally well with a well-topped pizza or with ragùs that aren’t too elaborate, offering a balance between juiciness and structure. Serve at around 16–18°C to appreciate the contrast between freshness and body; it doesn’t require long opening time, while ten minutes of breathing can round off any rougher sensations. A daily companion that doesn’t sacrifice character and freshness.
