Distillation

Whisky: double distillation in copper pot stills with manual cut management; extended fermentation in larch washbacks. Gin: vapour-infusion in a copper still ('Peggy'), botanicals placed in a basket separated from the distillate.

Ageing

Maturation in oak casks stored in dunnage warehouses at stable temperatures; predominant use of first-fill barrels (bourbon and sherry) and experimentation with virgin casks and wine casks for the Contrasts releases.
