Distillation and production

Distillation and production

Production method

For the whisky: artisanal process with lightly peated malting, roller-milled grist, long fermentation in larch washbacks, double distillation in copper pot stills and maturation in dunnage warehouses. Both brewing and distilling yeasts are used. For the gin (Red Door): vapour-infusion distillation in a copper still (known as 'Peggy'), starting from a wheat-based grain neutral spirit.

Whisky: double distillation in copper pot stills with manual cut management; extended fermentation in larch washbacks. Gin: vapour-infusion in a copper still ('Peggy'), botanicals placed in a basket separated from the distillate.

Ageing

Maturation in oak casks stored in dunnage warehouses at stable temperatures; predominant use of first-fill barrels (bourbon and sherry) and experimentation with virgin casks and wine casks for the Contrasts releases.

Producer history Benromach Distillery

The Benromach facility was built in 1898 in Forres. After years of closures and ownership changes, the site was acquired by Gordon & MacPhail in 1993 and underwent a restoration programme that brought production back online: the official reopening took place in 1998. Since then the distillery has revived a classic Speyside style characterised by a delicate touch of smoke and has expanded its range with experimental releases and significant aged expressions.

Production philosophy

To rediscover and showcase the traditional Speyside character through artisan production: malted barley with a light peat influence, hands-on control of production stages and careful use of casks to achieve rich expressions with a subtle smoky note. At the same time the distillery explores alternative maturation approaches with the Contrasts series and produces local gin in small batches.

Awards and recognitions

Benromach 40 Year Old won 'Best in Show' at the San Francisco World Spirits Competition (2022). At the same SFWSC (2022) Double Golds were awarded to Benromach 40 Year Old, Benromach 15 Year Old and Benromach Contrasts: Peat Smoke 2009; Benromach 15 YO also received Platinum for achieving Double Gold three years in a row.
