The winemaking process begins with gentle pressing in a lung press, followed by a cold decantation of the must before fermentation. During fermentation, the temperature is carefully monitored, keeping it between 18/19°C. The three wines obtained are assembled in the spring following the harvest to ensure that they are perfectly blended before bottling.

The wine is characterized by an intense aroma with predominant notes of apple and yeast, enriched by hints of wild flowers. The natural alcohol content is on average high, but perfectly balanced by the acidity.

This white is ideal as a meditation wine and pairs well with mushroom or fish-based dishes, cured meats and medium-aged cheeses.

Family-owned winery spanning several generations. Headquarters and vineyards in Cormòns, Collio, at the foot of Monte Quarin. Ponca soils that impart minerality to the wines. Production focused on four labels: mainly white wines and a Merlot. The Merlot is a niche production: approximately 1,500 bottles per year.
Winery history
The family's history begins with Giuseppe Raccaro, who moved to the Cormòns area in 1928. The family later specialized in viticulture and, starting in 1986 with Dario Raccaro, began bottling and selling with a focus on quality.
Production philosophy
Production aimed at expressing the terroir: careful work in the vineyard and winemaking choices designed to showcase local grape varieties and the soils' minerality, with an approach that respects nature and local tradition.
Terroir and vineyards
Located on the slopes of Monte Quarin, in the municipality of Cormòns. The vineyards grow on 'ponca' soils that impart mineral notes to the wines.
