Pairing Red meats, game, aged cheeses
A Barolo from the Bussia cru by Giacomo Fenocchio, 2021 vintage, that immediately shows a clear, vertical character. In the glass it opens with aromas of ripe red fruit, faded rose and light earthy notes; then sweet spices appear and a balsamic hint that adds depth without overpowering. The palate is supported by good acidity and tannins that are present but well integrated, providing structure and smoothness; the sensation is taut and linear, with a savory, fresh mid-palate that balances the material.

The finish is long and invites a few years of ageing, while already being enjoyable today with medium-structured dishes. It pairs with roasted red meats, braises and aged cheeses; it is best served at a not-too-high temperature to highlight the aromas. With a few years in the cellar more complex notes of leather and balsamic nuances will emerge, enriching the texture and depth of the sip. A Barolo that combines substance and finesse, suited to those who seek tannic elegance without excessive embellishment.
