On the nose, refined aromas of ripe fruit open up, particularly baked apple and floral notes, enriched by the characteristic winey scent of Port, which gives sweet tones of red fruits and delicate spices. On the palate, a harmonious balance emerges between fruity freshness and a touch of enveloping warmth, with a long and silky persistence that reveals a delicate memory of wood and vanilla. The result is an elegant and structured distillate, perfect for those seeking a rich and refined sensory experience.
This calvados pairs magnificently with apple- or spice-based desserts but can also be enjoyed as a digestif, accompanying moments of meditation and solitary pleasure.

Distillation
Double distillation in a 2,500 L repasse pot still; first distillation to obtain the 'petites eaux' (~30°), second distillation to ~70°, with heads and tails cuts calibrated according to the quality of the cider.
Ageing
Aging primarily in small French oak barrels (many reused casks) that promote pronounced wood–air exchange; use of barrels previously used for Sherry, Port and Banyuls to add color and complexity; racking and blending carried out in larger casks when necessary.
