The Calvados Pays d’Auge VSOP by Drouin is a refined distillate from the famous Norman region of Pays d’Auge, the historic heart of Calvados production. Made exclusively with apples grown in this dedicated area, the distillate reflects the balance between fruity sweetness and the typical elegance of this controlled designation. The VSOP indicates a minimum aging of four years in oak barrels, which imparts complexity and a smooth character without sacrificing freshness and liveliness.

On the nose, it opens with delicate notes of ripe apple, enriched by floral scents and slight hints of sweet spices and vanilla from the aging process. On the palate, softness blends with a pleasant structure, revealing hints of cooked fruit, almond, and light toasting, typical of the oak wood used. This Calvados is perfect to be enjoyed neat, at room temperature, to appreciate its finesse and balance, but it also suits refined cocktails or as an ideal complement to apple-based desserts or aged cheeses.

Maison Drouin is a family-owned producer specializing in Calvados Pays d'Auge. They carry out double distillation of cider in a repasse pot still, produce aged single-vintage bottlings and an experimental line finished in rum and whisky casks; the range is extended with gin and an apple-based aperitif (ABC).

Distillation

Double distillation in a 2,500 L repasse pot still; first distillation to obtain the 'petites eaux' (~30°), second distillation to ~70°, with heads and tails cuts calibrated according to the quality of the cider.

Ageing

Aging primarily in small French oak barrels (many reused casks) that promote pronounced wood–air exchange; use of barrels previously used for Sherry, Port and Banyuls to add color and complexity; racking and blending carried out in larger casks when necessary.
