The character of this Calvados is defined through a long aging process in oak barrels, which enhances its aromatic complexity and gives it an elegant and velvety structure. On the nose, intense notes of baked apple, vanilla, delicate spices, and a slight hint of toasted wood are perceived.
On the palate, it reveals a perfect harmony, where fruity sweetness intertwines with a subtle spicy note and a pleasant smoothness. The finish is long and persistent, rich in nuances that invite slow and thoughtful tasting. An excellent after-dinner companion, it also pairs well with refined desserts or blue cheeses. A true celebration of the territory and its distilling tradition.

Distillation
Double distillation in a 2,500 L repasse pot still; first distillation to obtain the 'petites eaux' (~30°), second distillation to ~70°, with heads and tails cuts calibrated according to the quality of the cider.
Ageing
Aging primarily in small French oak barrels (many reused casks) that promote pronounced wood–air exchange; use of barrels previously used for Sherry, Port and Banyuls to add color and complexity; racking and blending carried out in larger casks when necessary.
