The Champagne Cuvée Clos de l’Abbaye Blanc de Blancs Premier Cru Extra Brut from Doyard presents elegant purity and a taut structure. Pure Chardonnay, it displays aromas of green apple, cedar and white flowers supported by a mineral thread reminiscent of wet stone; the mousse is very fine and offers sensations of precision rather than opulence. The sip is tense, fresh and sapid, with an acidic backbone that supports a slim body without weighing it down, leaving a clean and vibrant persistence. On the palate the citrus notes give way to a slight bitter almond aftertaste that lengthens the finish.

On the palate there are also lightly suggested biscuity notes that balance the typical dryness of an extra brut. Versatile at the table, it shows at its best with raw shellfish, oysters, fish carpaccios and light preparations based on shellfish or fresh cheeses; it should be served cold but not ice-cold, in wide glasses to appreciate the aromas and the finesse of the bubbles. Perfect as an elegant aperitif, it also stands up well to pairings with light Asian cuisine and savory raw dishes; it is best enjoyed if allowed to breathe a few minutes in the glass.
