La cantina Gatinois, con la sua tradizione secolare, ha saputo coniugare la sapienza artigianale con tecniche moderne di vinificazione per creare un prodotto unico e di grande personalità.

Alla vista, il Réserve d’Aÿ si presenta con un colore dorato brillante, esaltato da un perlage fine e persistente. Al naso, offre un bouquet complesso e aromatico, dominato da note di frutta matura, agrumi e lievi sentori di crosta di pane e tostatura, a testimonianza della lunga maturazione sui lieviti. In bocca, è ricco e strutturato, con un gusto che spazia dalla freschezza delle mele verdi alle note più complesse di miele e frutta secca. Il finale è lungo e fragrante, con una piacevole mineralità che riflette il terroir di Aÿ.

All of the maison's wines are presented as Aÿ Grand Cru. Style focused on Pinot Noir, with some cuvées blended at approximately 80% Pinot Noir and 20% Chardonnay. Family-run, with long-standing continuity and hands-on artisanal production. Vineyards reported on multiple parcels. Hand selection of grapes, traditional pressing and hand riddling; multi-year aging on the lees for some cuvées.
Winery history
The estate has been associated with a family on the hills of Aÿ for centuries. The lineage cited on the maison’s website dates back to the marriage of Nicolas Le Cacheur and Françoise Remy in 1696, and the family has come to span twelve generations. In recent decades leadership passed through members such as Pierre Cheval, and today it is led by Louis Cheval.
Production philosophy
Rigorous grape-selection practices, small-batch vinifications, and traditional cellar vinification and aging. The approach prioritizes fidelity to the terroir of Aÿ and artisanal techniques such as pressing with a vertical press and manual riddling.
