Pairing Braised meats, game, long-aged cheeses
The Cirò Rosso DOC Riserva Ripe del Falco from Ippolito shows an intense ruby color with lively hues. On the nose it offers a complex, coherent aromatic profile: notes of ripe red fruit, light spicy hints and earthy touches complemented by undertones of dried flowers. On the palate it displays structure and depth, with tannins that are present but not aggressive, balanced acidity and a persistence that highlights the wine's savory character. The progression is linear and concentrated, suited to those seeking a red with personality without excess.

It pairs naturally with grilled meats, braised dishes and sauces of medium structure, as well as hard and aged cheeses. It is suitable for convivial occasions and rustic dinners, but can also accompany more elaborate dishes that require a wine with character. A light decanting if serving immediately and a serving temperature around 16-18 °C are recommended to enhance its aromas and balance.
