On the palate it shows a soft, enveloping texture: the initial sweetness is balanced by a subtle bitterness and a sapid quality that invites another sip. Full-bodied, with measured warmth and good persistence, it leaves mentholated impressions and bitter cocoa. It is suitable both for neat tasting at a cool temperature and as an element in structured cocktails; it also pairs well with dark chocolate desserts or blue cheeses, offering contrast and depth to the dish. Moreover, when used sparingly, it enriches sauces and ice creams without overpowering the other ingredients.
