The Aglianico Paestum IGP by Gillo Dorfles, produced by the renowned San Salvatore 1988 winery, is an emblematic example of enological excellence from Southern Italy, specifically from the Campania region. This red wine, made exclusively with carefully selected Aglianico grapes, showcases the power and complexity of this noble grape variety.

With an intensely ruby color, tending towards garnet as it matures, this wine exhibits a deep and complex bouquet on the nose. The aromas of ripe red fruits, such as sour cherries and plums, are intertwined with spicy notes and subtle hints of tobacco and dark chocolate, evidence of its aging in barrique.

On the palate, the Aglianico Paestum IGP from San Salvatore 1988 is structured and well-balanced. The entry is vigorous, with a noticeable yet elegant tannin, followed by a long and pleasantly complex aromatic persistence that invites a second sip. The acidity is well integrated and supports the aging potential of the wine, which evolves beautifully even several years after harvest.

An ideal pairing for grilled red meats, hearty dishes such as stew or game, and aged cheeses, this Aglianico Paestum IGP can turn a dinner into a memorable occasion. It is recommended to decant it at least an hour before serving to enhance all its qualities.

Thus, the tasting experience of the Aglianico Paestum IGP by Gillo Dorfles proves to be intense and unforgettable, making it an excellent choice for lovers of structured and deep wines.
